Meatballs

  • 1 lb ground chicken
  • ½ cup breadcrumbs or gluten-free
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • ½ tsp black pepper

Sauce

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • ¼ cup fresh lemon juice from 2 lemons
  • 2 tbsp capers drained
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions
 

Prepare Meatballs

  • Preheat oven to 375°F (190°C).
  • Combine chicken, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper in a large bowl.
  • Form into meatballs (about 1.5 inches in diameter).
  • Place on a baking sheet lined with parchment paper and bake for 15-18 minutes until golden and cooked through.

Prepare Sauce

  • Heat olive oil and butter in a large skillet over medium heat.
  • Add garlic and sauté for 1-2 minutes until fragrant.
  • Stir in chicken broth, lemon juice, and capers; simmer for 3-4 minutes.
  • Lower heat and whisk in heavy cream. Simmer until slightly thickened. Season with salt and pepper to taste.

Combine

  • Add baked meatballs to the skillet with the sauce.
  • Simmer for 5 minutes to meld flavors.
  • Serve hot, garnished with fresh parsley and lemon slices.
